The truffle cream sandwiched inside is made from Perigord winter truffles which have the strongest nostril and flavour of all of the black truffles.
The four of us debated what to top the pasta with (easy tomato sauce and a saffron cream sauce were two leading contenders) however because of the very generous present from Rob and Fay of each a black and a white truffle, we decided to share the bounty and dress the pasta in olive oil in which a few of the black truffle had been sauteed. Add the truffles and crumbs on top.
