Enfin le tuber brumal, ou truffe brumale, plus tardif, a une odeur plus musquée que le melanosporum. Certaines espèces très recherchées par les gastronomes sont appelées « diamant noir » comme la Tuber melanosporum. Longtemps rejetée par les chefs gastronomiques qui prenaient peur face à son goût si prononcé, elle a depuis été apprivoisée et lorsqu’elle est utilisée avec parcimonie elle parfume agréablement terrines et sauces diverses. Rien que pour cela elle mérite d'être connue. Très peu connue et d’une saveur très particulière, cet autre diamant noir mérite qu’on l’y regarde d’un peu plus prés.
