Nous avons constaté une prise de maturité lorsque nous conservons nos truffes dans de bonnes conditions (sable, argile), mais ce n'étaient pas des truffes blanches récoltées l'été. En saison vous pouvez réaliser cette recette avec de la Truffe fraiche notamment lorsque c’est la saison de la Truffe Noire Melanosporum de décembre à mars. Lorsque celle-ci est à point, ou à peu près, on découvre la poissonnière pour glacer le poisson ; puis celui-ci, bien égoutté, est dressé sur le plat de service et tenu au chaud. Pour un jeune, c'est peu engageant de se lancer dans l'aventure s'il n'est pas trempé dans le monde du réseau relationnel de la truffe. Les terfez sont relativement abondantes (on en trouve aussi en Hongrie) et n'ont pas le parfum d'un T. melanosporum ou T. magnatum.
