Vos marrons étant bien épluchés, mettez-les cuire une demi-heure dans la même marmite où cuisent les perdrix ; mitonnez des croûtes avec votre bouillon ; faites un cordon autour du potage avec vos marrons ; dressez les perdrix dans le milieu, & le reste de votre bouillon ; passez au tamis par-dessus le potage.
